Chef Álvaro Clavijo is a Colombian chef and the founder of El Chato in Bogotá, a restaurant widely regarded as one of the most important in modern Latin American cuisine. After training in top kitchens such as Noma, Per Se, and L’Atelier de Joël Robuchon, he returned to Colombia to develop a cooking style rooted in local ingredients and biodiversity.
