Alvaro Clavijo

Chef Álvaro Clavijo is a Colombian chef and the founder of El Chato in Bogotá, a restaurant widely regarded as one of the most important in modern Latin American cuisine. After training in top kitchens such as Noma, Per Se, and L’Atelier de Joël Robuchon, he returned to Colombia to develop a cooking style rooted in local ingredients and biodiversity. At El Chato, he works closely with farmers and producers across the country to create a constantly evolving tasting menu that highlights Colombia’s regional diversity. The restaurant earned major international recognition in 2025, ranking among the best in Latin America and helping place Colombian fine dining on the global stage.
