Michael Chen is a New Zealand-born, Sydney-trained bartender and entrepreneur who has worked in some of Australia’s and Shanghai’s best establishments, such as Zeta Bar, Mr. Wong and Highline. He is a co-founder of Signature Cocktail Co., a bottled cocktail company, and PAO Drinks Co., a natural soda company, and currently works as bars director of several award-winning venues in Shanghai.
